October 26th!


Todays recipe is...

Freddie Krueger's Casserole

1 pkg. flour tortillas, torn into wedges

1 lb. turkey meat, browned & drained

1 med. can Ranch-style beans (or plain pinto beans)

1 med. onion, chopped

2 cups shredded cheese (Longhorn, Colby, or combined w/Monteray Jack)

1 can Rotel diced tomatoes w/peppers (mild or hot, as you prefer)

1 can celery soup

Spray 2 qt. casserole dish with Pam. Line with torn up tortillas. Then layer, in this order: half of meat, beans, onion, cheese. Repeat layers, beginning with tortillas.

In a separate bowl, mix Rotel & celery soup. Pour over the layers in casserole. This will look repulsive, thus the name. You may want to add some grated cheese on top, just to make it look better. Do not stir. Bake 45 minutes to 1 hour at 350' covered. Should be bubbly and hot through & through.


We got out dog Bacon a Jaws custom for Halloween, he is not as unhappy as he looks either. It is a little short but he's a long guy.

Log loot for today was pretty good, I got some coloring sheets, some candies, some chocolate eyes with crisps in them, a package of orange hot chocolate, some bubble gum tape with Frankenstein on the package and a pumpkin pincushion that I put on out Halloween tree. I love you Log.

Finally the leaves are really starting to change and it feels more like fall. I think everyone needs at lease one trip to the Cider Mill.

I know this has nothing to do with Halloween but I so love the new Cupcake Shake from Burger King. It is so creamy, delicious and taste just like a vanilla cupcake. Yummy!
